I am in charge of the meal for the Assoc. Clinic and I was wondering if anybody out there had an idea for the meal to serve. I am trying to keep with the theme. I have had suggestions for Salmon, but does anybody have any ideas other than Salmon. Please help!!

Princess di, This may not be what you are looking for but.........when I think of cold, I think of soups and chili. We are doing Space Quest so I have not seen any of the material for Artic Edge. Just thought I'd share the thought. God Bless you in your work.

We are doing Salmon burgers, Cold slaw, pretzel logs with white cheese dipping sauce and edible campfires for dessert.
We are using fresh Salmon instead of canned.
I have tasted both recipes and the fresh is best.

Alaska Salmon Burgers
Ingredients
½ tsp. Crushed Rosemary
1 - 15 oz can Alaska canned salmon
1 egg
½ cup chopped onions
½ cup finely chopped green pepper
1 tsp. Grated lemon peel
1 T. lemon juice
1/8 tsp Lemon pepper
½ cup fresh whole wheat bread crumbs

Directions
Drain salmon, saving 2 tablespoons liquid and flake. Combine salmon, egg, onion, green pepper, lemon peel, bread crumbs, saved liquid, lemon juice, and seasonings. Mix well. Form into 4 or 5 burgers. Pan fry in lightly oiled skillet about 5 minutes until lightly browned on both sides. Top with your choice of toppings, serve on toasted buns

Sweet or salty edible campfires.
Supplies needed
Plain cookie
Canned Icing
French Burnt Peanuts
Candy Corn
Red licorice
Mini Marshmallows
Start with a cookie.
Use the icing as glue.
Make a circle of Burnt peanuts.
Add the candy corn and licorice.
You can put a marshmallow
on the end of a potatoe stick.
You can use different candies. Look in the candy aisle for ideas.
The salty campfire uses
Saltine cracker for the base.
Mini pretzel nuggets for the circle.
potatoe sticks for the inside of fire.
Cheese whiz or peanut butter for the glue.
Do not forget the marshmallow on the potatoe stick.
You can combine your Craft with your Snack.
Kids love creating their own snacks.

We had old fashioned hamburgers that were huge and called them 'moose' burgers, potato logs, baked beans. For dessert we had sugar cookies (they were supposed to be the claw cookies but the cook misunderstood how to put the almonds on them!) and moose track ice cream or snow cream frozen treat. It is from Mayfield Daries and taste just like real homemade snow cream!
