Okay, so how did you know what goes on in my house most nights? That seems to be the story of my life lately! I guess the solution often depends on what we have on hand! Tonight's solution was to heat up a few cans of beef stew, make some biscuits and a salad, and that was dinner! Sometimes we'll make breakfast for dinner (eggs & pancakes, and fresh fruit if we happen to have any). My all-time favorite is "Fend for yourself night" where everyone fixes their own meal, either leftovers, sandwiches, or whatever they can come up with on their own. I'm very thankful that my family does not mind leftovers!!

Macaroni and cheese. It's always a winner.

Vegetarian egg rolls for my 8 yo. The frozen kind you just pop in the microwave. She and I would just eat them together (nobody else likes them in my house).

And we try to keep frozen pizza on hand as well as self rising flour for quick biscuits.
