I am convinced that beans are an awesome food, but I need more ideas for cooking and serving them.
Surely there must be many bean-eaters here.

My Husbnnd loves pinto beans.

2lbs dried pinto beans, rinsed, sorted, & "precooked"
4 stalks of celery, chopped
2 onions, chopped
2-3 garlic cloves, minced
2 cans beef or chicken broth
favorite fresh or dried herbs
salt & pepper
ham bone or bacon, if available

Cover with at least 2 inches of water but don't overfill cooker. a can or two of diced tomatoes is yummy, too!

Set cooker to highest pressure, (15lbs on some models, setting #2 on others)
Pressure cook for 45-50 minutes

Take above recipe of pinto beans, mash them, add cilantro, some hot sauce, & cheese and serve with flour tortillas
or serve as a bean dip.

I really like lentils. They are one of the highest sources of fiber and folic acid. Just follow the package directions, they cook quickly and are extremely flavorful. I usually add extra garlic...

Hello all,
Actually I have rice and beans at least once a week due to my husband being PR. I usually use a recipe from one of the books I got but add my own touches. If you need the recipe I would be happy to give it to you.

1 9-oz can of Vienna Sausages
3 tbls. olive oil
2 tabls. recaito
1 cup tomato sauce
1/2 cup manzanilla olives
1 15.5 oz can Red Kidney Beans
2 cups short grain rice
4 cups boiling water
salt and pepper to taste

Combine the sausages, oil, and recaito in a large pot. Saute quickly over medium-high heat; reduce the heat and add the tomato sauce, olives and kidney beans. Cook for 5 minutes.
Add the rice and the water and season to taste. Turn the heat back to medium-high and cook until the water is absorbed. Stir the rice well, reduce the heat to low, and cover the pot. Cook for another 20 to 25 minutes.

P.S. you can buy the recaito or make it yourself. I prefer to make it myself. If you want that recipe I can give it also.
